Ingredients
Bachalau soaked overnight - about enough for 4 people
half a small onion chopped
3x sweet potato peeled & chopped
2x red pepper chopped
fish stock - knorr is nice
Spice Mixture
1tsp cumin seeds
1tsp caraway seeds
1tsp coriander seeds
1tsp all spice (pimenton)
half tsp cayenne pepper
1 clove garlic
half a small onion
olive oil
lemon juice
2 sun dried tomatoes
a little water
Roast the seeds gently until they begin to aromatise - smell strong - in the pan you'll use. Throw these with all the rest of the spice mixture ingredients EXCEPT THE WATER into a little blender. I have something like this http://tinyurl.com/ylzlug7
If the mixture needs some water to loosen it up and blend the spices, add slowly until you get a paste. You can use a pestle & mortar but I've a broken collar bone so I can't be bothered.
Wash the baccalau. Fry the half onion & pepper gently until they start to colour. Add the baccalau and fry for a minute or so. Add the spice mixture and fry for a minute gently. Cover with water and add potato, stock cube and half the coriander leaves. Simmer for about half an hour. I used a pressure cooker because it's quicker.
Serve with some green beans or other green veg like cabbage, broccoli etc. Maris pipers or other fluffy potatoes would work quite well instead of sweet potatoes - put some carrots and celery in for variation. If you have some stale bread, add it to the sauce to soak it up and give you extra fuel for these cold winter days.
